Pumpkin Honey Butter... YUMMMM!


We are having a grand Nor'easter here today (fun fact: for the first 34.5 years of my life here in New England, I thought a Nor'easter was only a snow storm... it was not until today that I learned that a rain storm can be categorized as one as well.) which means a cozy cuddle day, thus avoiding raking for another day... darn! Although I did take the opportunity to open my door and snap a leaf peeping photo... I love macro photography!

Anyhow... as the crisp autumn air set in and with my penchant for all things pumpkin, I decided to play with making some pumpkin honey butter. Not one to toot my own horn... but man, is it good! This is a very small amount to fit in a 4 ounce Ball jar, since nobody in my house eats pumpkin but me...


Pumpkin Honey Butter

2 tablespoons softened butter (use REAL butter, it's just better!)
1 tablespoons honey
2 teaspoons canned pure pumpkin
1/2 teaspoon pumpkin pie spice (I actually used a whole tsp, but I LOVE this spice.)

I simply blended the ingredients with a whisk until fluffy. If you make a larger amount, I would use a mixer to get a nice whipped butter. Store it in the fridge for a couple of hours and the flavors will really integrate. Of course, I smoothed mine on toast immediately because I am impatient like that. But it was still delicious!
