Tuesday Afternoon Delight

I have came across this recipe last week and it is so delicious that I have had it for lunch 4 times since! I altered it to my taste, so here is my version:

1 tbsp mustard
1 tbsp maple syrup
2 tbsp Greek yogurt
tsp poppy seeds (I actually threw in a bit more)
curry powder (I start with 1/2 tsp and add to my taste)
1 sweet potato cut into 1-inch-thick slices and roasted until tender
4 red onion slices, cut 1/8-inch thick
a few slices of red peppers
quarter cup feta cheese
baby spinach
fresh basil if you have some
1 pita or flatbread or 2 slices bread

This is super easy. Just mix the mustard, maple syrup, Greek yogurt, poppy seeds and curry powder into a dressing. Spread on your pita, flatbread or bread. Add the vegetables and cheese and fold over if you have pita or panini or just add another slice on top if it is regular bread. Grill in a nice hot pan or in a panini press.

It is such a great sandwich, I could have it for lunch every day... and the kids actually like it too!

  3. We actually do something using similar items. Pita flatbread, feta, yellow or orange peppers, pizza sauce, basil, spinich, minced garlic... and toast.
