Yummy Mommy's Greek Sweet Potato Fries

I haven't shared a recipe in awhile and when I was stuffing my face with these the other day, I thought I would pass these along in case others might enjoy. Does this look good or what?

These are my special sweet potato fries. I love sweet potatoes in any manner. Unfortunately, nobody else in the house does. So I usually make them in some manner for my lunch. Not only do they taste great, did you know 1 cup of sweet potato has 750% of your daily vitamin A, 65% of vitamin C and 25% of your fiber AND ZERO fat! So, when I bake up fries, I can feel good about stuffing a few pounds into my face.

And my new favorite recipe? Adding feta. The blend of the salty feta with the sweetness of the potato is to die for. (Disclaimer: I could probably add feta to my breakfast cereal and still love it.)

Anyhow, this is how I do it:

Preheat oven to 400ยบ Peel the potatoes and slice then into fries ( I like mine nice and fat.)

Soak them in cold water for 2 or more hours. (This is supposed to help make them crispy. I have yet to see it help. I think making crispy sweet potato oven fries is an urban legend. But I like mine all squishy, so it's ok.)

Drain them and dry them off and then mix them in a bowl with a couple of tablespoons of olive oil and some salt and pepper.

Spread them evenly on a baking sheet (I highly recommend parchment paper for way easier cleanup) making sure they are over-laying eachother.

Bake for approximately 15 minutes (I have a convection oven, so mine cook very quickly. This also depends on how big you cut the fries.)

Flip all the fries and bake for another 15 minutes.

Remove from the oven, and when they are still hot, sprinkle some feta and oregano on top. I use about a quarter of cup per potato.


And then... eat up! If you are like me, you are going to love these so much, you will be making these quite often.

  2. Yum!! Those look good - I'm not a huge sweet potato fan, but they are good when done right and the boys love them - I should try these for them!!

  3. sweet potato fries are a newer taste for me- never had been able to sample any til about 2 years ago. Now that I know what they are- can't get enough!

  5. I love sweet potatoes and try to substitute them for regualr potatoes when I can. Nate won't eat them though. I made sweet potato home fries this morning for breakfast! Can you make them without soaking them for 2 hours?

  6. No one in my house likes them either, except me. Those look delicious! I could almost smell them through my computer. I had to stop myself from licking the screen :)
